Stake a steak
We want to reconnect people to the processes and responsibilities of eating meat to make it a fully conscious process from field to fork.
We have been inspired by the highly successful ‘crowd funding’ approach to create our ‘Auction room’.
When we have a ‘lot’ available we will e-mail all our members (become a member – its free) and let them know. We will introduce the lot and the ‘stake’ options so that you can decide if it is what you are looking for.
We need to sell all the ‘stakes’ before the animal is taken to slaughter, we will give you an estimated delivery then when the lot has sold we will contact you to agree an actual delivery date to suit you.
If the lot does not sell in the time period we will give you a full refund.
Our job is to be your livestock and meat ‘broker’ selling ‘stakes’ or shares in each animal’s potential meat. We use our expertise to find the best farmers we can and show you what they do that is so special. You as a conscious consumer can then actively choose who reared your animal and the principles behind they way they manage their land and livestock.
Some of the best and most ethical farmers operate on a very small scale, they often can not justify selling their own meat direct and the expense of starting a butchery. Mostly these animals slip into the ‘general’ food chain un-identified as anything special.
Often in order to run a meat business you have to operate on a relatively large scale to cover your large costs with a consistent regular supply of animals, this can lead to dealing with large scale farms, co-operatives or buying in an auction ring.
Many butchers and retailers just buy the most popular primals from a wholesaler and never even see the whole carcass, let alone have any knowledge of the animal and farmer. As a customer you often just get to chose from very broad generic terms like ‘traditional breed’ or ‘local’.
We want to empower you to become more involved in the process, as your ‘broker’ we will do the hard work like choosing the farmers and understanding their system, finding a suitable high welfare abattoir, arranging the transportation of the animals, negotiation the prices, adhering to the legislation, arranging the hanging and butchery specification, packing the meat ready to be sent to your door and of course being on hand to answer any questions.
We will use existing highly regulated and inspected premises and systems in order to ‘join the dots’.
One of the biggest challenges of a meat business is ‘balancing’ the carcass. When you want to be able to offer customers a choice of their preferred cuts — perhaps a fillet steak — you are forced to de-value the rest of the carcass and find different markets for the lesser valuable meat. If you do not manage to sell all of the carcass within 5 days you have lost the profit made on the preferred cuts.
We feel that in order to work with the smaller numbers of very special ethically reared animals we should celebrate all the meat cuts from the animal and not just the popular ones. We hope you will appreciate the chance to re-discover the delicious array of meals that can be created with slow cooking, mince and dice and keep the relatively tiny amount of steak available on an animal as a rare treat.

Most animals in the UK that are described as 'grass fed' are 'finished' (fattened for slaughter) on cereals, during the 'finishing period' they lose most of the nutrients they gained from their former grass diet, they are therefore (in nutritional terms) no different to an intensively reared grain fed animal.
Our animals are 100% grass fed, reared and 'finished' (fattened) on grass or forage (unless otherwise explained in the product description), we therefore adapt our availability around when they are naturally at the correct 'finish'. This system frees our farmers from having to use cereal feeds to accelerate weight gain, it is better for the animal, it has a lower 'carbon footprint' and produces higher quality, more nutritious, sustainable meat.
We offer 'stakes' in a selected animal for a set of period of time, the animal will only be slaughtered for our purposes if all the 'stakes' sell, This system allows us to avoid waste and having to operate through wholesalers or other 'middle men' who are often used to 'balance' the carcass and sell the unwanted cuts. The more links in the supply chain the more difficult traceability becomes, marketing terms are more generic and you end up dealing with companies not people.
We believe, as a 'concious consumer' you may have to compromise, and to get the very best food you have to adapt around the producer. Be flexible about the cuts of meat you eat and use your freezer as your best food planning tool. By being open to a new approach you get the chance to access exceptional quality ethical meat at a fair price, if you add up the total sum of the meat you eat over a period of time, it is likely that on a 'per meal' basis your 'stake' will work out very good value.
The meat that we sell is all from pasture based systems, we believe that animals grazing exclusively on grassland produce by far the most nutritious meat. Grazing animals behave in a natural way, maintain their health and fitness and require less medicine or intervention. Grazing is a great way of managing important habitats and by reducing grain consumption (half the UK wheat crop is eaten by animals) and turning arable land back to pasture, we could significantly contribute to reversing climate change, yes I am serious!
We believe animals should be treated with compassion and respect whilst alive, should be allowed to express their natural behaviour and should never be subjected to pain, neglect or cruelty.
The high welfare meat produced from this system should be eaten with full joyful awareness in the knowledge that, as a meat eater, you have taken the time to ensure this animal was looked after and its footprint on our planet is a beneficial one, not a deep rut!
Buying a 'stake' may involve larger volumes of meat than you are used to purchasing at one time.
The buying scheme is ideal for clubbing together with family and friends. Why not have a party to celebrate the arrival of your hampers of meat. Sharing out the meat can be a great excuse for a social gathering and is a far more enlightened approach to meat eating, than mindlessly buying factory farmed chicken breasts in a plastic wrapper!
